Combine lean boiled chicken, tender omelet pancake, crispy Iceberg leaves, aromatic basil and fresh seasonal vegetables in one dish. Season with a drop of vegetable oil with tonic lemon juice, add a pinch of salt and pepper and immediately serve the picturesque heap to the table. Delicious, multi-textured and not leaving a feeling of heaviness salad with egg pancakes and chicken for lovers of a healthy diet.
Ingredients:
Chicken fillet - 200 g
Egg - 1 pc.
Iceberg lettuce - 200 g
Tomato - 1 pc.
Cucumber - 1 pc.
Vegetable oil - 30 ml
Lemon juice - 20 ml
Green basil - 20 g
Salt, black pepper - to taste
Step by step recipe:
Step 1 - Take the foods indicated in the recipe. Pre-boil the chicken fillet in salted boiling water (with herbs and roots), cool without removing it from the broth. The meat will be juicy and soft.
Step 2 - Wash and dry herbs, vegetables, lettuce leaves on a paper or cloth napkin. Drive the egg into a deep bowl, shake with salt and ground pepper until smooth. Combine the yolk with the protein completely. Optionally, you can pour in a little milk or add a spoonful of sour cream - everything that is usually found in omelets. Dry components (flour, starch), as a rule, are not added.
Step 3 - Pour the egg mixture onto the hot and greased surface of the frying pan - turn it over, filling the entire area. We bake a thin pancake for a couple of minutes and immediately remove from heat so as not to dry it out.
Step 4 - Roll the egg pancake into a roll and cut it across. You can simply cut into noodles: narrow, wide - whatever you like. We tear cold poultry meat into fibers.
Step 5 - The preparatory stage is over, we proceed to the assembly of the salad. On a spacious plate, lay out the "scraps" of lettuce leaves first. More or less evenly scatter pieces of vegetables: tomato and cucumber. If you like it sharper, add onion chopped in half rings or chop a clove of garlic.
Step 6 - Then we put chicken and omelet around the entire perimeter, sprinkle with lemon juice, oil, salt and pepper to taste.
Step 7 - Decorate with basil or other herbs, serve salad with egg pancakes and chicken to the table.
