Quiche is a French open cake made from shortcrust pastry or puff pastry, with the addition of filling and filling. The filling can be absolutely any, traditionally it is chicken, fish or mushrooms.
Today I want to share a recipe for spring quiche stuffed with cheese and fresh wild garlic. After all, now is the very peak of its maturation. And it was during this period that she is a very frequent guest at our table. I try to add it to almost all dishes, as it blooms for a very short time.
Ingredients:
Dough:
- Wheat flour - 300 gr.
- Butter - 150 gr.
- Chicken egg - 1 pc.
- Salt - 0.5 tsp
- Sour cream - 1 tbsp.
Filling:
- Ramson - 100 gr.
- Mozzarella cheese - 150 gr.
- Bulb onions - 1 pc.
- Olive oil - 1 tablespoon
- Salt to taste
- Ground black pepper - to taste
Fill:
- Cream 20% fat - 1 tbsp.
- Chicken eggs - 2 pcs.
- Parmesan cheese - 50 gr.
- Salt to taste
Prepare all the ingredients you need. I propose to make the base of the pie from shortcrust pastry, and the filling - from mozzarella cheese with the addition of fried onions and fresh wild garlic. The filling will be heavy cream, which can be replaced with sour cream or even milk.
Sift flour and salt into a bowl.
Take very cold butter and grate it directly into this container. Dip it in flour for convenience. This process must be very fast so that the oil from the heat of our hands does not begin to heat up.
In principle, if it is convenient for you, you can entrust the kneading of the dough with a blender with an attachment for grinding into crumbs or with other devices.
Quickly grind the flour and butter with your hands into crumbs. You can do this with a fork, spatula, or spoon. Add sour cream and an egg to the flour crumbs.
Gather the dough into a ball. You don't need to knead, but just collect it quickly.
Place the dough in a short baking dish, spreading it over the sides. Send the quiche base to bake in a preheated oven to 180 degrees for 15 minutes.
While the dough is baking, add the filling. Fry the onion in vegetable oil until golden brown. Slicing - half rings.
Rinse fresh wild garlic, dry and chop finely.
Grate the cheese. Add fried onions, wild garlic, salt and pepper to it. Stir the filling.
To pour the pie in a bowl, combine the eggs and salt.
Pour in the cream with a high fat content (at least 20%) and grate the Parmesan on a fine grater. Stir the fill.
Remove the lightly baked dough.
Put the prepared filling on the base of the pie, smooth it out.
Fill with filling and set the piece to bake at 180 degrees for 30 minutes. Bake until golden brown.
Take out the finished quiche with wild garlic and cheese. Let it cool down. After a while, cut into pieces and serve.
