Despite the simplicity of this dish, there are a number of nuances that must be observed in order to prepare a delicious, soft and juicy liver. First, it should be fried over high heat for just a few minutes. Secondly, you do not need to salt it right away, so as not to dry it out.
We use pork liver for the recipe. It is almost devoid of film, so it does not require painstaking preparation, unlike beef. And pork liver stewed in sour cream with onions turns out to be more tender.
Ingredients:
- Pork liver - 500 gr.
- Bulb onions - 1 pc.
- Sour cream - 200 gr.
- Milk - 250 ml.
- Vegetable oil - 2 tablespoons
- Salt, pepper - to taste
Prepare all the necessary foods from the list.
Wash the liver well, cut off the layers of fat. Cut it into equal medium-sized pieces - strips or squares.
For convenience in slicing, the offal can be frozen in advance in the freezer; in solid form it will be easier to cut.
Place pieces of liver in a deep container, pour milk. Set aside for 30 minutes. Milk will help remove the bitterness that is characteristic of pork liver.
Peel the onion, trim in thin strips. You can also use a different kind of slicing, but not very finely.
Put a frying pan on the fire, pour in 1 tbsp. vegetable oil. Add the onion and sauté for 3 minutes, until tender.
Drain the milk completely, and place the liver on the onion, after pouring in another 1 tbsp. oils. Fry it on both sides over high heat for several minutes, no more. To prevent the onion from burning, slide it to the side for a while.
When the liver is lightly browned and hardened, stir in the onion. Continue frying, reducing heat.
After 5 minutes, add sour cream in the required amount, sprinkle with ground pepper, salt.
Pour in water. Stir thoroughly, evenly distributing sour cream over the liquid. Simmer the liver in sour cream sauce for the next 15 minutes over low heat, covered. Stir the mixture periodically to prevent it from burning.
Transfer the finished dish to a plate, serve. Stewed liver will perfectly complement any garnishimproving its taste.
