Scrambled eggs with tomatoes, onions and cheese

Breakfast gives us a boost of energy for the whole day, it must be tasty and healthy. Scrambled eggs are often cooked in different varieties in the morning. This recipe requires a small selection of available foods. In the fresh tomato season, scrambled eggs cooked with tomatoes and cheese are especially delicious. Choose ripe, meaty tomatoes. You can take any cheese that is available in the refrigerator: hard, feta, and processed.

Ingredients:

Tomatoes - 300 gr.

Chicken eggs - 3 pcs.

Bulb onions - 1/2 pc.

Processed cheese - 2 slices

Butter - 50 gr.

Salt to taste

Fresh parsley (or dill) - 2 sprigs

Step by step recipe:

Step 1 - Prepare products according to the list.

Step 2 - Cut the peeled onions into half rings.

Step 3 - Heat butter in a frying pan, make the heat medium, put onion slices and fry for 5-7 minutes, stirring occasionally. The onion should become translucent. You can cook scrambled eggs without it if you don't like it. Then skip these 2 steps.

Step 4 - Rinse the tomatoes, cut out the stalk. Cut into pieces, spread to the fried onions. Many people do not like the presence of tomato peel in the eggs, so you can first scald them with boiling water and remove the skin.

Step 5 - Cover the pan with a lid and simmer for 8-10 minutes. The tomatoes should change color.

Step 6 - Now that they are soft, eggs can be added. We break each of them first into a bowl, then pour into a frying pan. This way we will not let the spoiled egg into the dish. If you are more of a chatterbox, stir the eggs in a bowl first and then pour over the tomatoes.

Step 7 - Salt. On top of the dish, lay out pieces of cheese, previously freed from cellophane and cut into small pieces.

Step 8 - Bring the dish over the fire until cooked, as you like. It will take 2-3 minutes until the yolk is soft to dip the bread, and 5-7 minutes until it is frozen.

Step 9 - Sprinkle the finished fried eggs with finely chopped herbs.

Scrambled eggs with tomatoes, onions and cheese are ready. Serve hot.

A delicious addition to it would be croutons or toasted baguette.
