This marinade is good because it is suitable for marinating and then baking in the oven or grilling any fish: sea / ocean, lake, river. Depends on your catch :) The taste of the mixture is so versatile, balanced and appetizing that it is worth cooking more to keep some of it for serving instead of tartare.
Ingredients:
Sour cream - 150 g
Vegetable oil - 40 ml
Lemon juice - 2 tbsp l.
Garlic - 0.5 pcs.
Sugar - 1 tsp l.
Sea salt - 1 tsp l.
Black pepper, mustard, rosemary - to taste

Step 1 - To make the oven baked fish marinade, take the foods listed. Sour cream should be fresh, without any fermentation. Thick milk cream is suitable for replacement. And if you get home / village sour cream, the marinade itself and then the fish baked in it will turn out to be magical, incredibly tasty. Any refined vegetable oil is suitable: olive, sunflower, corn or others. The composition of the spices can be expanded, something can be changed at your request. For example, coriander, fennel are often included in fish dishes, and natural vinegar (usually white / light) is used instead of lemon juice to enhance the wine note and freshness.
Step 2 - Many people prefer to buy ready-made seasoning mixtures, but for the scrupulous I suggest an easy recipe for their own "bouquet". First, in a mortar, grind large crystals of sea salt (or throw finely ground, it doesn't matter) along with mustard seeds, spicy rosemary needles (sage, thyme, mint are good here). With effort we work with a pestle and crush everything into a heterogeneous powder.
Step 3 - Next, add the garlic. We pass the peeled teeth through a press. You will need a lot of garlic, about half the head. Pour in a small portion of granulated sugar.
Step 4 - Pour oil with a neutral odor and lemon juice into the dry composition (plus, if desired, three thin flakes of lemon zest). Shake thoroughly.
Step 5 - For a softer, silky texture and better result, add a thick and fat sour cream. Beat again intensively in a circle and combine all the ingredients together, try. If there is a shortage of something, we add this or that product.
We grease the fish carcasses with the resulting marinade, marinate for 30-60 minutes and then send it to the oven to bake in an open form or foil. By the way, you can also fry in a pan / overhead fire of the stove.
