Goose soup is a great option for a lunchtime meal. The first dish turns out to be tasty and rich, and also very aromatic. It is prepared from a simple set of ingredients. Instead of bulgur, you can use any other cereal or pasta, and any part of a goose carcass, even its frame, is suitable for cooking broth.

Goose soup nourishes and warms perfectly. With the onset of cold weather, this is what you need. I recommend trying it!

Ingredients:

Goose meat (any parts) - 350 g.

Potatoes - 4 pcs.

Carrots - 1 pc.

Bulb onions - 1 pc.

Salt, black pepper - to taste

Bay leaf - 2 pcs.

Black peppercorns - 3 pcs.

Bulgur - 50 g.

Dill - 2 branches

Vegetable oil - 2 tablespoons

Water - 2.5 liters.

Step by step recipe:

1. To make goose soup with bulgur, we will prepare the products according to the list for the recipe. We use fresh meat, maximum chilled. Frozen foods will not make such a tasty and aromatic broth.

2. We wash the goose thoroughly under running water, remove the remnants of the feathers. If you do not like too fatty soups, trim the skin. Pour the required amount of water into a suitable cooking pot, add the meat, bay leaves, black peppercorns, half an onion and carrots. We send to the fire. As soon as the liquid boils, reduce the heat to minimum, remove the foam on the surface and cook the goose until soft. This will take about an hour.

3. Meanwhile, cut the remaining vegetables into small cubes, preferably the same size. Fry them in vegetable oil until golden brown, not forgetting to stir occasionally so as not to burn.

4. When the goose meat is easily pierced with a knife or fork, the broth is ready. We filter it through a fine sieve, peel the meat from the bones and divide it into portioned pieces. We send the pan back to the fire.

5. Peel the potatoes and cut into medium cubes, add to the broth.

6. Next, fill in the washed bulgur (or another cereal of your choice). Cook for 10 minutes from the moment of boiling. Add salt and pepper to taste.

7. We send the fried vegetables to the goose soup and boil for 5 minutes.

8. Add finely chopped dill and remove the pan from heat, cover with a lid and let it brew for 10 minutes.

9. Delicious, rich goose soup is ready. We pour it into portioned plates and serve hot on the table.
