Beef liver in sour cream with onions

Beef liver has a lot of nutrients, so it will be useful to regularly include it in your diet. Despite the specific taste and smell, delicious dishes are obtained from this offal, the main thing is to cook it correctly.

To get a soft liver, it is enough to stew it in sour cream sauce. Sour cream, as it were, will slightly muffle the minor imperfections of the offal, namely, a slight bitterness. This dish simply amazes with its tenderness and juiciness.

The cooking process takes place in two stages - first, the liver is briefly fried with onions, and then stewed in a sour cream soup.

Ingredients:

Beef liver - 400 gr.

Wheat flour - 2 tablespoons

Bulb onions - 1 pc.

Sour cream 20% - 100 gr.

Water - 150 ml.

Salt, pepper - to taste

Vegetable oil - 2 tbsp.

Parsley - 10 gr.

Prepare food.

Peel the head of the onion, rinse, cut into strips of medium thickness.

Place a frying pan on the burner, pour in 1 tablespoon of oil, after heating, lower the onion feathers. Saute the vegetable separately for 2 minutes so that it becomes soft and translucent, acquires a golden hue. Stir the onion periodically with a spatula during sautéing.

Remove the top film from a piece of liver, cut off any blood clots, then rinse under running water. Remove moisture with a napkin, cut the offal into pieces of approximately the same size and shape.

To make the liver easier to cut, freeze it a little in the freezer compartment, then it will not be so soft. Do not chop it very finely, otherwise the pieces will be too dry after frying.

Grind the liver segments with flour from all sides, shake off the excess.

Move the fried onions to the side, pour another 1 tablespoon of oil onto the surface of the pan, then lower the pieces of liver. At the same time, the dishes should be heated to the maximum, so that the liver immediately becomes golden brown, leaving all the juices inside.

Fry the offal together with the onion for no more than 3 minutes, stirring regularly so that the components do not burn. Season a little with salt and pepper.

Next, add sour cream at room temperature.

Pour in the required amount of water. Stir until the sour cream is completely dissolved in the liquid base.

Simmer the liver in a sour cream soup for the next 15 minutes over low heat under a closed lid. At the end of the gravy, taste the taste, decide on the missing spices.

Sprinkle the beef liver in sour cream with onions with parsley, chopped with a knife before serving.
