A real storehouse of vitamin C is black currant compote. Such berries for creating drinks or dishes, desserts can be purchased during the harvest season in the market or frozen in a supermarket. Vitamin C is destroyed during heat treatment, so currant compote is only brought to a boil and immediately turn off the heating, and the berries themselves give up their color, taste and aroma to the liquid when they cool to room temperature temperature.

It should be remembered that currants have a rather sour taste, so you will need more sugar for the drink than when preparing it from other berries. If desired, the currant aroma can be emphasized with a hint of vanilla, ground cinnamon and other sweet spices.

Prepare your ingredients. Frozen berries can not be defrosted, but only washed.

Step 2 of 5

Sort the purchased or plucked berries: remove damaged, rotten, stems and leaves. Rinse them in water, pouring into a deep bowl or salad bowl. After that, drain the liquid, and pour the currants into a saucepan or ladle, that is, into a container in which you are going to cook compote.

Add granulated sugar immediately there. By the way, it can be replaced with honey of any kind, but you only need to add such a sweet ingredient only after the drink has cooled down to 35 degrees, otherwise it will lose its beneficial properties.

Pour warm water into the container, ideally boiling water so that the compote is ready faster. Place the ladle on the stove with maximum heat turned on. Stir the contents gently to dissolve the sugar completely.

Many recommend adding a pinch of citric acid or lemon juice, but this is not necessary - currants already taste sour.

Leave to cool at room temperature or place in the cold. In winter, cool the compote to 40 degrees to serve warm, and in summer, serve it chilled with ice.
