I honestly admit that I do not know a single person who does not like squash caviar. Everyone in my family adores her and is often asked to cook, even in winter. Of course, winter zucchini cannot be compared with fragrant summer ones, but with a strong desire, you can please yourself with a delicious snack in the cold season. Now I will show you our favorite recipe for homemade squash caviar with mayonnaise.

Ingredients:
Zucchini - 350 g
Bulb onions - 1 pc.
Carrots - 1 pc.
Garlic - 1 clove
Parsley - 10 g
Tomato sauce - 1 tbsp
Salt to taste
Ground black pepper - to taste
Lean oil - 2 tablespoons
Mayonnaise - 1 tablespoon
Sugar - optional
How to cook:
Prepare all the foods on the list. Onions, garlic and carrots must be peeled, washed, and wiped dry with paper towels. Wash and dry the zucchini and herbs as well.
Cut a large onion into cubes, place in a preheated pan in refined vegetable oil, fry until sweet and slightly golden brown.
Grate large carrots on a coarse grater, send them to the onion. Reduce the heat a little and fry the vegetables for 3-4 minutes.
When the carrots are soft enough, load the grated zucchini into the pan, cover with a lid. During the stewing, liquid will emerge from the zucchini shavings and the vegetables will cook in their own juice.
Let the vegetable mixture simmer over low heat for 10 minutes, pour in a little water if necessary. Then add your favorite tomato sauce, garlic, salt and pepper to taste. Sweat the caviar for a minute or two.
Add the chopped parsley last, stir and turn off the stove.
Transfer the cooked vegetables to a blender bowl and beat the entire contents until smooth.
Now add a spoonful of good low-fat mayonnaise to the caviar, stir, taste. If the tomato sauce was a little sour, you can always add a little sugar for balance.
Serve cooked squash caviar with mayonnaise in portions or in a large beautiful bowl. Slices of warm bread, slightly dried in the oven, are perfect for such a snack.
