Juicy and flavorful stewed cabbage with vegetables is the perfect side dish for any meat or fish dish. It is especially tasty when served with fried or baked duck. You can choose any vegetables that are combined to taste with white cabbage. For example, the classic ones are carrots and onions, tomatoes, green beans, green peas, zucchini or potatoes. It is best not to use eggplants - they take a little longer to cook than cabbage.

To make the dish more delicious, first fry the onions and carrots in vegetable oil until golden brown and then add the rest of the vegetable slices. Do not forget about spices and seasonings - ground paprika will give the appetizing color of stewed cabbage, which you can replace with tomato paste, tomato juice or canned peeled tomatoes.

Ingredients:

Cabbage - 400 g

Onions - 1 pc.

Carrots - 1 pc.

Green beans - 150 g

Vegetable oil - 3 tbsp.

Water - 0.5 tbsp.

Salt and pepper to taste

Ground paprika - 0.5 tsp

Prepare food.

Peel the onions and carrots, rinse in water. Cut the peeled vegetables into quarters. Heat the oil in a cauldron and put the chopped carrots in it. Fry for about 1-2 minutes.

Then add the onion slices and the pre-peeled and chopped green beans. Fry for about 3-4 minutes.

At this time, peel the protective upper leaves of the white cabbage forks, cut off the necessary part and chop it with medium ribbons. Do not grind, otherwise the cabbage slices will turn into mashed potatoes when stewing!

Once the vegetable cuts have been passaged, place the cabbage strips in a container.

Salt and pepper immediately, add ground paprika (if you replaced it, add tomato paste). Gently mix everything so that the cabbage mass is on the bottom, and the sauteed vegetables on top, otherwise they will burn. Fry everything for 2-3 minutes, then pour hot water into the cauldron.

Reduce heat to low and simmer for 15 minutes. This time will be quite enough for cabbage and green beans to cook. If there are chopped potatoes in the ingredients, then it is best to increase the time to 20 minutes.

Place the stewed cabbage with vegetables on a plate or dish, garnish with fresh herbs and serve. Such a vegetable side dish goes well with sour cream of any fat content.
