Ingredients:
Strawberry puree - 500 grams
Sugar - 400 grams
Pectin - 20 grams
Honey -75 grams
Lime - 0.5 pcs.
Course of action:
I am preparing the necessary set of products. I use frozen strawberry puree in this recipe. Instead of honey, you can take glucose.
I punch the strawberry puree with a hand blender for a more uniform consistency.
I mix 100 grams of sugar (of the total amount) with pectin.
Put the mashed potatoes in a bowl with a thick bottom and bring it to a boil. Then I add sugar and pectin and, stirring constantly, cook for 2 minutes.
Since the mass thickens quickly, all products must be prepared in advance and be at hand.
I add honey and the remaining sugar to the berry mass. Continuing to stir, cook for another 3-4 minutes.
Mixture temperature 106 degrees (measure with a cooking thermometer). When the mass begins to become covered with bubbles, remove from heat, pour in lime juice and stir.
I immediately pour the berry mixture into the prepared forms. It freezes instantly, so you need to act quickly.
I leave the candies for 6 hours to solidify. Then I take them out of the mold and roll them in sugar (optional). I spread the strawberry marmalade on parchment and let it dry slightly for another hour.
The delicacy, familiar to many from childhood, is ready.
