The easiest way to feed the whole family for lunch or dinner is to fry pork liver pancakes and serve them with sour cream, low-fat mayonnaise, ketchup, or other delicious sauce. They do not cook for a long time, but the offal must be chopped using a meat grinder or food processor, an immersion blender. Cutting into small pieces is not suitable - the pancake mixture should be almost uniform.
So that the dish does not turn out to be bitter in taste, milk of any fat content is added to the dough: cow, goat, soy. It gives the pancakes a delicate, creamy flavor. They are fried in odorless vegetable oil, which can be easily replaced with melted butter.

Ingredients:
Pork liver - 0.5 kg
Chicken egg - 2 pcs.
Milk - 150 ml
Wheat flour - 7 tbsp.
Salt - 4 pinches
Vegetable oil - 50 ml
How to cook:
Prepare food.
Rinse pork liver in water, cut off the veins and films. Chop the offal into medium pieces and chop through a meat grinder or in the bowl of a food processor.
Beat chicken eggs into the liver mass, pour in milk of any fat content. Stir gently to distribute all ingredients evenly.
Stir in sifted wheat flour. Depending on the size of the chicken eggs, you may need a little more or less. Gently stir in the flour with a fork or whisk to prevent lumps from forming.
After that, salt the dough and pour in the vegetable oil. Stir and let it rest for 20 minutes to activate the gluten and prevent the pancakes from tearing when turned over.
Grease the frying pan with vegetable oil for the first time, warm up. Next, spread the portions of liver dough with a tablespoon at an equal distance from each other. Fry them on moderate heat for about 1-2 minutes, then turn and cook for the same amount of time. Transfer them to a plate, and then put the portions of dough into the pan again. And so on until all the pancakes are fried.
Be sure to line your plate with paper towels to absorb excess fat.
Serve the liver pancakes warm, adding fresh herbs and any sauce to taste. You can serve them with some garnish.
