Soup kharcho with beef is a hearty, rich and aromatic first dish originally from Georgia. There are many options for its preparation, where the composition of the products changes slightly. The proposed recipe assumes the presence of potatoes in the soup, making the dish more satisfying. In the preparation of a more traditional kharcho, the presence of this vegetable can be omitted.

Ingredients:

Beef - 500 gr.

Rice - 100 gr.

Walnuts - 100 gr.

Onions - 1 pc.

Carrots - 1 pc.

Potatoes - 3 pcs. (optional)

Sweet pepper - 1 pc.

Tomato paste - 60 gr.

Ground red pepper - 0.5 tsp

Hops-suneli - 1 tbsp

Garlic - 4 cloves

Cilantro or parsley - 30 gr.

Bay leaf - 1 pc.

Water - 2 liters.

Salt to taste

Prepare all the foods on the list. Wash vegetables well before use.

Place a pot of water on the stove, bring to a boil. Salt, toss in peppercorns and bay leaves. Rinse the beef, place in boiling water, cook for 40 minutes until tender.

Peel the potatoes, chop into small cubes, add after 40 minutes into the already rich broth.

Add tomato paste. Next, pour in 100 ml of water. Stir while spreading the paste over the liquid. Add spices, add chopped garlic.

Break the walnuts into small segments. To do this, you can use a mortar or blender. Pour the chopped nuts into the tomato mixture, mix. Simmer for 5 minutes.
