Snack muffins have recently become very popular at buffet and holiday tables. They are prepared with a huge amount of various additives. These can be mixtures of aromatic dry herbs, such as Provencal or Italian, and dry meats, and sun-dried tomatoes or pickled cucumbers. But tonight, we'll be making my family's favorite snack muffins - smoked chicken, cheese and olives. Try it, it's very unusual and delicious.
Ingredients:
Hard cheese - 80 g
Smoked chicken - 100 g
Flour - 200 g
Milk - 100 g
Vegetable oil - 80 g
Baking powder - 11 g
Chicken egg - 3 pcs.
Olives - 150 g
Salt - a pinch
Sugar (optional) - a pinch
Ch.m. pepper - taste
Preparation:
1. To make chicken and cheese muffins, prepare the items listed. It is desirable that all ingredients are at room temperature. Open a jar of olives, drain the liquid.
2. First, mix all the liquid components. To do this, pour milk and odorless refined vegetable oil into a deep bowl, add chicken eggs. Stir until smooth.
3. Now add all the dry ingredients - sifted wheat flour, baking powder, a pinch of salt and sugar, ground black pepper. Mix the contents of the bowl with a whisk or fork until smooth.
4. We cut the smoked chicken (I have fillet) into small cubes, rub our favorite hard cheese on a coarse grater. Add all this to a bowl, mix well again and let the finished dough stand for a few minutes, so to speak, “ripen”. During this time, the baking powder will begin to act and bubbles will appear on the surface of the dough, which means that it is ready and you can start baking.
5. Insert paper molds into a muffin baking dish, put a full tablespoon of dough in each. Top with a few olives or pitted olives. Preheat oven to 190 degrees and bake the snack muffins on top and bottom for 20-25 minutes, until skewered to dry.
6. Allow the finished baked goods to cool completely, if a crispy crust forms on top, then put the cooled muffins in a plastic bag and leave for a while.
7. Snack muffins with smoked chicken and cheese are ready.
Such muffins are most often served on a festive table with wine, but as a snack or for a picnic it will also be great.
