The most famous zucchini snack is "Mother-in-law's language". It is served both on weekdays and on holidays, creating in a minimum amount of time. Moreover, you can fry the zucchini slices in advance and chill in the refrigerator, and smear and fill immediately before serving.
The classic filling consists of tomatoes, and garlic is added to mayonnaise. But you can replace tomatoes with slices of boiled chicken or quail eggs, cottage cheese, halves of Mozzarella cheese - be guided by your taste.
The appetizer received the name "Mother-in-law's tongue" due to the fact that wide layers of zucchini look like tongues, and the bitter garlic aroma is associated with the sharp speeches of the wife's mother.
Ingredients:
Zucchini - 2 pcs.
Tomato - 4 pcs.
Mayonnaise - 2 tablespoons
Garlic - 2 cloves
Vegetable oil - 50 ml
Wheat flour - 2 tbsp.
Salt - 3 pinches
How to cook:
Prepare food.
Rinse the zucchini in water, cut off the tails on both sides. Cut into plates with a thickness of at least and no more than 0.5 cm. Salt the slices and leave for 5 minutes so that it separates the liquid, otherwise it will stand out when frying, and the slices will not be fried, but stewed in their own juice!
Then rinse the plates in water, pat dry with paper towels.
Pour wheat flour onto a plate or saucer. Sprinkle the sliced squash in it on both sides.
If desired, flour can be mixed with various chopped spices or herbs: rosemary, thyme, oregano, basil.
Heat vegetable oil in a frying pan and put the blanks in it, but only really hot! The flour will instantly absorb cold fat and will lag behind the zucchini and will burn.
Fry the tongues for 1-2 minutes on each side on moderate heat. Then place on a plate and cool.
Peel the garlic cloves, rinse in water, and press into mayonnaise. Mix everything gently. Rinse the tomatoes and cut in half, remove the green cores and cut the vegetables into slices.
Lubricate one zucchini tongue with mayonnaise and garlic, put a piece of tomato on the edge and twist into a roll. Do this with all grilled zucchini.
Put the appetizing "Mother-in-law's tongues" on a dish or plate and serve. Chill in refrigerator if desired, garnish before serving with fresh herbs.
