Unsurprisingly, peas are popular with vegans, vegetarians, and healthy food advocates. In addition to essential amino acids, an arsenal of vitamins and fiber, it is high in vegetable protein with almost 70 percent digestibility. And in terms of energy value, peas are the leader among vegetable crops.

Due to the caloric content (about 300 Kcal per 100 g, which is significantly higher than that of potatoes) and vegetable protein, as well as a relatively low price, peas are widely available and replace meat in the diet of many, meat products.

Ingredients:

Dried peas - 200 g

Milk cream 10% - 100 ml

Butter - 30 g

Water - 400 ml

Salt, black pepper, bay leaf - to taste

Step by step recipe:

Step 1 - Let's take the products from the list. Dried peas are sold in different varieties: split, whole, yellow, green, organic. The principle of cooking remains the same for everyone, only the cooking time and the color of the puree change.

Step 2 - Rinse dry peas under running cold water, remove plaque. Pour already clean peas in a bowl with about 300 ml of water and keep at room temperature for 8-10 hours (it is convenient to soak in the evening and prepare pea puree the next day).

Step 3 - Drain the "waste" liquid, rinse the peas once more and put them in a cauldron / saucepan - pour 400 ml of water and boil. Toss in a spicy bay leaf for flavoring. After boiling, reduce the heat and simmer for 30-40 minutes with moderate boiling. Stir occasionally to separate the stuck peas from the walls.

Step 4 - We try, if the legumes have softened enough - drain the hot broth, discard the bay leaf that has given its aroma. If necessary, increase the cooking time.

Step 5 - Grind with a submersible blender with a "knife" attachment or other improvised means for pureing vegetables and legumes until a thick homogeneous mass.

Step 6 - Season - lower the portion of butter, salt and pepper. We continue to knead.

Step 7 - Dilute with freshly warmed milk cream (or pea broth) to the desired consistency.

Step 8 - Serve healthy pea puree as a side dish for any dish. For example, delicious with fried porcini mushrooms and golden onions. Bon Appetit!
