It is difficult to find a person who does not like hot pies. Delicious, ruddy, with a crispy crust and delicate filling.
I want to share with you a recipe for placinas, which we, in Moldova, prepare very often. The simplest dough is based on kefir and soda. Such a dough is a real lifesaver when you need to cook quickly and tasty. It is more suitable for frying, I do not recommend using it in baking. And the filling is cottage cheese, with the addition of fragrant and healthy fresh wild garlic.
Very tasty placinas are obtained. Everyone should try them!
Ingredients:
Dough:
- Wheat flour - 500 gr.
- Kefir - 300 ml.
- Salt - 1 tsp
- Baking soda - 0.5 tsp
- Vegetable oil for frying - 70 ml.
Filling:
- Curd 9% - 500 gr.
- Fresh ramsons - 100 gr.
- Chicken egg - 1 pc.
- Salt to taste
Step by step recipe:
Prepare all required ingredients for placinas. Remove cottage cheese, eggs and kefir in advance from the refrigerator so that they become at room temperature. Use kefir of any fat content, ideally 2.5% and above. For the filling, take the dryest cottage cheese, without excess whey, then it will not leak out during frying.
Pour warm kefir into a bowl. Add salt and baking soda. If the kefir is cold, then heat it for 10-15 seconds in the microwave.
Stir kefir with baking soda until it starts to foam. This process will take a minute, no more.
Add the sifted flour. Don't add everything at once. It is better to add in parts, then you definitely will not be mistaken with the amount and will not hammer the dough with flour.
Knead a soft, elastic dough. Knead in a bowl first, then transfer to a work surface and knead well. Cover the dough with a clean towel and let it “rest” for 10-15 minutes.
In the meantime, get busy with the filling. Sort the ramsons, rinse and dry. Chop it finely.
Add salt and egg to cottage cheese, mix.
Add chopped wild garlic and mix well. The filling is ready.
Lightly dust the dough with flour, wrinkle it a little.
Divide into 8-10 equal pieces.
Roll each ball into a cake, put the filling in the middle.
Lift the edges up and collect them in a bag, pinch well.
Turn the cake over with the seam down and stretch the piece slightly. You can walk a little with a rolling pin, but don't roll it too thin.
Fry the pies in a hot skillet in vegetable oil on both sides for 3-4 minutes. Fry with low heat. Fry the first side without a lid, the heat may be slightly higher, then turn the pie over, reduce the heat and fry under the lid until golden brown.
Take out the finished placinas and immediately transfer them to a large saucepan. Keep them under the lid until you have cooked all the pieces. Thus, they "reach" and become softer and more tender.
Serve hot pies with cottage cheese and wild garlic. Will suit them well tea or compote.
