Beef Stroganoff is also known as "Stroganoff beef". Obviously, you will need beef to prepare the dish. Better to take the tenderloin. It is cut in a certain way, fried over high heat, and then simmered in tomato-sour cream sauce. The result is juicy, tender beef. Thick gravy, enveloping its pieces, adds richness of taste and aroma to the dish.
Ingredients:
Beef - 600 grams
Bulb onions - 1 pc.
Sour cream - 1 glass
Water - 1 glass
Wheat flour - 1 tbsp.
Sunflower oil - 4 tablespoons
Tomato paste - 1 tablespoon
Salt - 0.5 tsp
Ground black pepper - a pinch
Course of action:
1. Prepare food.
2. Remove any films, veins and visible fat from the meat.
3. Slice the beef across the grain into thin slices.
4. Put them on a board, cover with cling film and beat slightly.
The film protects the workplace from splashes when beating meat.
5. Cut the broken pieces into thin strips.
6. Chop the onions arbitrarily.
7. Fry wheat flour in a dry skillet until golden brown and light nutty flavor. When frying, stir it constantly with a wooden spatula, otherwise it will burn. Then the flour should be immediately poured into a bowl.
8. Pour vegetable oil into a frying pan and heat. Fry the prepared beef for 5-7 minutes, then place in a bowl. The meat must be fried, not stewed in its own juice.
9. In the same pan, fry the chopped onions, pouring in some more vegetable oil if necessary. Then add sour cream, tomato sauce or pasta, fried flour, salt and ground black pepper.
10. Pour water into the sauce and, stirring, bring to a boil.
11. Transfer the fried meat to the boiling sauce.
12. Cover the pan with a lid and darken the stroganoff for 20-30 minutes over medium heat.
13. Classic beef stroganoff with sour cream and tomato goes well with any side dish: cereals, vegetables, mashed potatoes, pasta.
If you like thick gravy, stew the dish longer. If you want more sauce, then add not one, but two glasses of water. In any case, gravy plays a major role in beef stroganoff. You can easily experiment with this dish by adding any new ingredients to the sauce, such as mushrooms.
