Many people consider burgers, and everything from the world of fast food, to be junk food. And, of course, they will be right. But the harm is not so much from the fast food itself, but from the use of stale and low-quality products for cooking, non-compliance with sanitary standards, technologies, and so on.
But a lot changes when you take the time and organize a burger for your family in your home kitchen. After all, a burger is, in fact, a cutlet with salad and sauce, supplemented with slices of bread, just lined up in a tower, but no one thinks about it.
The minced meat and bacon burger presented in this recipe is incredibly tasty. Freshly baked sesame seed bun, juicy burgundy patty with crispy bacon bits and aromatic tomato sauce, all cooked at home are nothing like street junk food. It is only important to "turn on" the sense of proportion in time and not eat an extra portion, otherwise the same harm will begin... to the figure!
Ingredients:
For cutlets:
Onions - 50 g
Bacon - 250 g
Paprika - 2 tbsp. l.
Minced meat - 500 g
Cheese - 50 g
For the sauce:
Onions - 50 g
Garlic - 4 cloves
Sugar - 1.5 tbsp. l.
Tomato paste - 5 tbsp. l.
Paprika - 3 tbsp. l.
Olive oil - 1 tbsp. l.
Additionally:
Bun - 4 pcs.
Cheese - 4 slices
Tomato - 2 pcs.
Lettuce - 4 pcs.
Preparation:
Step 1: Prepare the required ingredients. You can use buns from the supermarket, but don't forget that their taste is also important for a burger. It is better to cook them at home for confidence, especially since it is not at all difficult, here is an excellent recipe. It is preferable to take cheddar cheese, but you can take any hard or semi-hard, only it should not lose its flavor after heat treatment, such as Russian.
Step 2: You should start cooking with the sauce. Finely chop the onion and chop the garlic.
Step 3: Preheat a frying pan with olive oil or any non-flavored vegetable oil. Put the onion and garlic and fry for 1-2 minutes. Add cane sugar to it, which will sweeten and make the texture a little crispy. In the absence of brown granulated sugar, you can use regular sugar (it will still taste good).
Step 4: After a minute, add ground paprika and add tomato paste. Stir, bring to a boil and that's it - the sauce is ready. If it turns out to be too thick, add a little boiling water.
Step 5: For cutlets, chop the bacon (can be replaced with brisket) and onion equally finely. Although they will slightly decrease in size during frying, you should not count on this especially, in a large form it will be difficult to form cutlets with them. Grate the cheese with medium teeth.
Step 6: Put onion and bacon in a preheated frying pan. It is important to fry before the bacon is crispy. Add paprika and stir.
Step 7: Mixed minced meat (50/50 pork with beef - of course, it is better to wind it yourself) mix with grated cheese and bacon fried with onions. Mix very thoroughly.
Step 8: Divide the minced meat into 4 equal parts and shape the patties to a size slightly wider than the diameter of the buns.
Step 9: In a dry frying pan, fry the slices of buns cut along the length. After that, fold them cut to cut and leave until the assembly of the burgers.
Step 10: Add a small amount of olive oil to the pan and fry the cutlet semi-finished products on both sides. Make the degree of heating so that the oil boils slightly, but the cutlets do not burn, but blush, having time to fry inside. During the frying process, do not press down on them, you can only see the degree of roasting from below. Immediately after turning to the other side, put cheese slices the size of a cutlet and 0.5 cm thick on top. The hardness of the cheese will determine how much it has time to melt while the cutlet is being fried on the other side.
Step 11: Now you can start assembling the burgers. Spread 1–1.5 tsp on each slice of the bottom half of the bun. l. sauce. Put lettuce sheets on top, on them - slices of fresh tomatoes, then cutlets with cheese, top with generous sauce and finish all the "buildings" with the upper halves of the buns.
Step 12: Homemade burgers with minced meat and bacon cutlets are ready. Serve with soft drinks, coffee or tea.
