For lovers of quick-to-prepare, hearty, tasty and at the same time light dishes - salad with chicken, egg, cucumber and crispy Iceberg leaves. A large portion of such a mix can easily replace lunch, it is completely self-sufficient and does not need an additional side dish. The main task is not to overdry the chicken. Cut the breast into small pieces and fry quickly.

Ingredients:

Chicken fillet - 400 g

Eggs - 2 pcs.

Cucumbers - 2 pcs.

Onions - 30 g

Iceberg lettuce - 100 g

Garlic - 1 tooth

Vegetable oil - 40 ml

Balsamic vinegar - 20 ml

Salt, black pepper - to taste

Step by step recipe:

Step 1 - Use the foods listed for this recipe for chicken salad. Boil the eggs hard-boiled in advance, cool and remove the shell. Refuel the dish before serving so that the cucumbers do not let the juice prematurely and do not lose their density, freshness and pleasant crunch. The vegetable oil can be of any variety, including rich, unrefined oil to your liking.

Step 2 - We wash the chicken fillet with cold water, cut off the fat layers, wipe dry with a napkin and cut into small cubes of approximately the same size. Sprinkle with salt and ground hot pepper, mix.

Step 3 - Fry the seasoned cold cuts in a pan with the addition of vegetable oil (about 20 ml). Completely evaporate the resulting moisture, then lightly ruddy the fillet. We act quickly: five minutes with high heat and another five minutes under the lid with decreasing temperature. In this way, we preserve the juiciness and tenderness of meat fibers. We transfer the fried poultry to a paper towel, which will absorb excess fat.

Step 4 - In the meantime, chop the clean cucumbers with circles and an onion with thin strips. At the same time, after washing, dry lettuce leaves on paper. I recommend the Crispy Iceberg.

Step 5 - Add the chicken cooled by that time to the vegetables, as well as hard-boiled eggs - pre-cut them in circles. If you want - crumble or chop the eggs.

Step 6 - Tear the iceberg lettuce leaves with our hands, send them to the salad bowl. Sprinkle the dish with balsamic vinegar and the remaining vegetable oil, salt and pepper if necessary and stir from top to bottom.

Step 7 - Put the fresh and nutritious chicken, egg and cucumber salad on a spacious plate and serve immediately.
