Sweet pepper and tomato lecho for the winter

For a really tasty and bright lecho in color, choose juicy, pulpy red cuboid peppers. If you add pale Belozerka, Kapi or other thin-walled sweet peppers for more volume / yield, then about a third of the total weight.

In the recipe for pepper and tomato lecho, vegetable oil (any refined) is optionally included. For the specified number of products, 3 tbsp is enough. l. (added during cooking). For those who prefer winter preparations without oil, I recommend my repeatedly proven version.

Ingredients:

Sweet pepper - 1000 g

Tomatoes - 500 g

Sugar - 3 tbsp. l.

Salt - 0.5 tbsp. l.

Table vinegar 9% - 2 tbsp l.

Black pepper - 3 g

Step by step recipe:

Step 1 - Take the groceries on the list. For long-term storage, sterilize jars and lids in a steam bath or in an oven. It is clear that vegetables should be of good quality, without spoilage, rot, ripened. Before starting the whole process, sweet peppers and tomatoes are thoroughly washed with cold water.

Step 2 - Cut the peppers in any convenient way. You can use large petals, cubes, thin straws or wide bars - as you like. The main thing is to separate it from the seeds and internal soft partitions. Dip the slices into a bowl of boiling water and leave for 5 minutes. We steam it. Then we discard it in a colander and drain the liquid.

Step 3 - Let the tomatoes stand separately in boiling water. Before that knife, cut the cross-shaped lines, dip and after 3-5 minutes, after catching, remove the hard skin. Chop the peeled tomatoes into juice. An alternative to fresh tomato juice is purchased tomato juice. If you are lazy, you can replace it. It will come out tasty too.

Step 4 - Add salt, sugar, ground pepper, vinegar to the fresh juice. Stir.

Step 5 - Load the bell peppers. We put on an overhead fire, boil and boil for about 5 minutes.

Step 6 - Remove from the stove and immediately, while still hot, pour the pepper and tomato lecho into a sterile container, seal it tightly. After cooling at room temperature, we transfer it to a cool darkened room. It is not necessary to wrap up and additionally sterilize, otherwise the pepper will lose its pleasant density and become soft.

Step 7 - Serve lecho with snacks, on your own and with any hot dishes.
