You can prepare a delicious and incredibly tender dish from both old potato tubers and young ones. The potatoes are pre-boiled in boiling water, then baked in milk with spices and butter. It is the oil that saturates with a delicate aroma and turns solid roots literally into melting ones.
In many ways, this potato is similar to the well-known dauphinua gratin, but much less expensive (without cheese and milk cream), simpler in technology and with lower calorie content.
Ingredients:
Potatoes - 1000 g
Milk - 500 ml
Garlic - 3-5 teeth.
Butter - 50 g
Salt, black pepper, smoked coriander - to taste
Greens - for serving
Step by step recipe:
Step 1 - For baking, in addition to potatoes and milk, you will need spices, high-quality butter, a few cloves of garlic. Flavor with your favorite herbs, if desired, add pungency or a spicy note.
Step 2 - Scrape the young potatoes with a knife or a hard sponge, peel off the thin skin. We clean the tubers of the old crop in the usual way. Ideally, pick potatoes of approximately the same size. So that they all have time to evenly and steamed in water, and then to roast in a milky environment. Leave the small ones intact, cut the larger ones in half or quarters.
Step 3 - Bring about 1.5-1.7 liters of water to an active boil over the top fire of the stove, load peeled vegetables - do not salt, do not season, boil, reduce the temperature and cook for about 5 minutes. Drain the hot liquid immediately. The inside of the potatoes remains moist.
Step 4 - We transfer to a heat-resistant form - distribute evenly around the entire perimeter, scatter on top garlic cloves, add pieces of butter (sometimes it is replaced with olive, but not margarine), pepper.
Step 5 - Boil the milk with the scented smoked coriander and a large pinch of salt. Pour into a container with potato slices - cover almost completely. We throw in foil or baking paper (without any sealing), send it to the oven, which was hot by that time, for 30-40 minutes. We bake potatoes in milk in the oven at 180 degrees. Periodically check the softness / readiness - pierce with a knife or skewer.
Step 6 - Serve delicious potatoes in milk, decorate with fresh herbs, hot and hot.
