1. Carrots need to be grated on a coarse grater or on a Korean carrot grater. I always choose the second option, the salad looks more beautiful.
2. Celery stalks need to be peeled of tough fibers. This must be done if you want the salad to be tasty and the celery tender and not tough. Better to use a regular vegetable peeler and peel the celery.
Recommendation: Don't throw these fibers away, they are great for broth.
Advice: when peeling the celery, break the stem in half; if any fibers remain, remove them.
