My cottage cheese is grainy, so I will interrupt it with a blender until it becomes pasty. If the cottage cheese is pasty, then this is not necessary.
Whisk the whites into a fluffy foam, salt a little (a pinch) and beat. I took 140 gr. proteins. It turned out from four eggs. I whipped for literally 2 minutes (I have a good mixer). The result is such a stable foam:
I recommend whipping the whites cold.
I add cottage cheese to the proteins and mix at low mixer speeds for literally 15 seconds.
I add 50 ml. water and an incomplete teaspoon. Mix everything again with a mixer.
Add whole grain flour in portions and knead the dough. The dough should not stick to your hands. It took me 430 gr. flour.
Transfer the dough to a bowl, cover it with a towel and leave it to rest for at least 40 minutes.
Then I cover the baking sheet with baking paper and form a cake 33x38 cm in size.
In the oven preheated to 200 degrees, I send the cake to bake for 15 minutes.
After 8 minutes it will start to rise very strongly!
I take out the cake after 15 minutes, turn it over and for another 5 minutes in the oven.
Done! The cake comes with a pocket. You can put absolutely any filling in it or eat this cake instead of purchased bread. Bon Appetit!
