An old and simple recipe for cottage cheese cookies: tasty and without problems

Truly cozy and warm, homemade tea becomes with homemade cakes, prepared with love! Cookies will be more than appropriate - they are versatile homemade baked goods with a huge number of different recipes.

Today I want to invite you to cook cottage cheese cookies according to one very old and simple recipe. The biscuits are very soft with a thin crispy crust.

Cooking ingredients:

Cottage cheese - 250 g
Chicken eggs - 2 pcs. (one for lubrication)
Butter - 100 g
Sugar - 100 g
Salt - a pinch
Vanillin - to taste
Baking powder - 2 tsp l.
Flour - about 400 g

Put softened butter in a bowl, add sugar, a pinch of salt, a little vanillin or vanilla sugar (or vanilla essence), and grind with a mixer or even just a fork.

Next, add soft pasty cottage cheese and one chicken egg. If you do not have soft cottage cheese, but there is the most common one - granular, then I advise you to rub it through a sieve. With soft cottage cheese, the cookies are much more tender.

Now we sift most of the flour (about 350 g) and baking powder, and begin to knead the dough. Pour the remaining flour as needed, if the dough is going to gather in a ball and keep its shape, you can no longer add flour.

Now we take the second chicken egg, break it into a small separate bowl and whisk it lightly with a whisk - this is to grease the cookies.

We divide the dough into several parts (for convenience in further work), alternately roll each part into a layer, 1 cm thick. We cut off the uneven edges - we get a square and a rectangle. Now, first, grease the surface with a beaten egg, and only then cut into small squares.

You can, of course, grease with an egg after cutting, but this is much faster and more convenient.

And, in the same spirit, we continue to make cookies.

We transfer the sliced ​​cookies to a baking sheet covered with parchment paper or oiled with vegetable oil and send them to bake in the oven ...

... and cookies are baked for 20-25 minutes at a temperature of 180 degrees. Once the cookies are slightly golden, take them out of the oven - otherwise dry them out! Cook, taste, enjoy your tea!
