I love eggplant very much! Now they are cheap in the store, and I often buy them.
Today I will share a very interesting recipe for how to cook delicious eggplant. We will not fry anything! Everything is much simpler, tastier and healthier.

A step-by-step recipe for making unusual eggplant rolls.
I cut the eggplants into thin plates.
I put the eggplants in a bowl in this way: eggplant in one layer, sprinkle with salt, then eggplant and salt again. We do it in this sequence. I leave it like this for 10 minutes. This will remove excess bitterness from the eggplant.
I'll take care of the filling.
I transfer the cottage cheese into a deep bowl (if it is grainy, it is better to "kill" it with a blender or rub it through a sieve).
I add chopped walnuts, garlic, dill, salt, pepper to the curd and mix everything.
Let's go back to the eggplant. They have already started the juice. I wash the eggplants under running water and dry each piece with a towel.
I cover the baking sheet with parchment, grease it a little with vegetable oil.
I shift the eggplants and grease them with oil on top too. I cook in an oven preheated to 180 degrees for 15-20 minutes.
Now I make rolls: I put 2 teaspoons of the filling on the eggplant and distribute it in a thin layer over the entire surface. Then I put a slice of tomato and wrap it in a roll.
I highly recommend "roll" these rolls in sesame seeds. It turns out sooo tasty and aromatic. Try it!

Recipe:
3 small eggplants.
350 gr. cottage cheese.
50 gr. walnuts.
2 tomatoes.
50 gr. sesame seeds.
2 cloves of garlic.
Pepper and salt to taste.
