For cooking you will need any vegetables that are suitable for baking and you like.

Frozen peas.

Grease the baking sheet with vegetable oil - a thin layer. If you are afraid that the vegetables will stick, then you can cover with foil.
Put fresh vegetables on a baking sheet.
With frozen ones, I do this: I heat up a frying pan without oil and put, for example, frozen peas there. Stir constantly until the moisture evaporates - it took me 1 minute. We do this with each type of frozen vegetables.
