It may immediately seem that the recipe is complicated, but no. Making such a cake is very simple. And it always turns out well, very tasty!
First the dough. In a bowl, I mix the softened butter and sugar. I add two yolks and starch. Mix everything with a fork again.
I add flour, a little baking powder and a pinch of coarse sea salt in parts. If you do not like salty notes in desserts, salt can be excluded. But I always add - it turns out much tastier!
I put the finished dough in the refrigerator for at least 20 minutes. At this time, I am preparing the filling.
I cut half of the apples into such plates:
I put it in a deep plate and add a little lemon juice.
I cut the remaining apples into small cubes. I heat a piece of butter in a frying pan, put the chopped apples, add sugar and, with constant stirring, the carcass for several minutes.

I distribute the dough in the form. I make small sides. Preheat the oven to 180 degrees. I put the form with the dough in the oven and bake for 8-10 minutes.
Then I take the form out of the oven. Sprinkle the dough with a little starch and spread the filling. Stewed apples first, then fresh ones. Sprinkle the apples with sugar - and put the mold in the oven again (this time for 25-30 minutes).
Beat the whites (as for meringues), gradually adding the powdered sugar. Here is a pinch of citric acid. Beat until firm peaks.
Then I take out the almost finished pie from the oven and put the whipped egg whites on top of the baked apples. I just spread it with a spoon.
And I put it in the oven again for about 10 minutes (the proteins will brown on top). And that's it! The cake is ready!
