How to cook
First, the cake (base for cheesecake). I prepare it from ready-made powder. But you can take absolutely ANY chocolate chip cookie and grind it into crumbs in a blender.
I add melted butter to the crumb and mix.
I cover the bottom of the mold (I have a detachable one with a diameter of 22 cm) with parchment paper. And I spread the chocolate chips. I tamp it well.
I put the form in an oven preheated to 160 degrees and bake for 10 minutes.
At this time I will prepare the curd "filling".
Put the curd cheese (high fat cream cheese) in a bowl. I don’t use cottage cheese for such desserts, otherwise it’s impossible to make a cheesecake, but it turns out a curd casserole :)
You can take any brand of cheese. It's not cheap, of course, but for cheesecakes I usually buy large packages - two kilograms (both more convenient and cheaper). At the end of the article, I will leave a link to the cheese that I used this time (this is not an advertisement!). I just know there will be questions, so I answer right away.
I add sugar, flour and vanillin. Beat with a blender at low speed. Then I add melted chocolate (not hot!). And stir again.
At the end, add the eggs one at a time. And I mix them with the cheese mass at the minimum speed of the mixer.
I take out the form from the oven and put the prepared cheese mass into it. I level it with a spatula.
I reduced the oven temperature to 150 degrees. I put the dish in the oven and bake without opening the door for 45-50 minutes.
Then I turn off the oven, open the door and let the cheesecake cool. When it cools down, I put it in the refrigerator for another 4 hours.
I cut it with a warm dry knife. Can be drizzled over with chocolate or sprinkled with chocolate chips. You can decorate with berries. It's very, very tasty!
