You can cook them in any kitchen and from any fish.
To make the cutlets tasty, they must be juicy! With fish cakes, it's always difficult. But I found a way to make very juicy and delicious fish cakes.
You don't even need a meat grinder here. I cut the fish fillet as small as possible.
Then the chopped fish needs to be chopped well with a knife to get an almost homogeneous minced meat.
I divide one large onion in half. Chop finely. I will add half to the minced meat in this form.
And I fry the other half in a small amount of vegetable oil until transparent. Then I add paprika, stir and immediately remove the pan from heat.
In a bowl I combine minced fish, fresh onions, fried onions and a few slices of bread (I previously filled the bread with milk and mashed it with my hands). Instead of bread, you can take oatmeal and grind them in a blender. I also add an egg, spices and salt to this. I stir it.
RECIPE:
• Fillet of any fish - 1 kg
• Bread - 3-4 slices
• Milk - 0.5 cups
• Onion (large) - 1 pc. (Or 2 pcs. medium)
• Paprika - 1 tsp.
• Egg - 1 pc.
• Breadcrumbs
• Spices
• Salt
I form cutlets with wet hands. And roll them in bread crumbs. I prepare crackers myself. To do this, I rub the bread on a grater and dry it in the oven.
I fry the cutlets on both sides until golden brown.
I put the fried cutlets in a heat-resistant form and put in an oven preheated to 180 degrees for 10-12 minutes.
If you don't have an oven, you can put the patties in a saucepan, add a little water and steam under the lid.
