During the eggplant season I cook them almost every day. And in order not to get bored - I always cook in different ways. Either salad, or caviar, or baked with meat. Today I have eggplant chops. The simplest recipe, but the result is wonderful! I don't think I will surprise anyone with this recipe. But if you haven't tried it, I highly recommend it!

I wash the eggplants and peel them. You can, of course, not cleanse, but I like the cleaned ones more. I cut the eggplant into thin slices no thicker than 5 mm. The thinner, the tastier it turns out.
Salt each slice and leave for 10 minutes.
Beat eggs in a separate plate. Pour flour into the second plate. Dip each piece of eggplant first in flour, then in an egg. That's right - not the other way around!
I put it in a frying pan with heated oil and fry on both sides.
Serve with some sauce. I really like it with plum adjika (I'll leave a link to the recipe at the end of the article).

• Salt
• Sunflower oil
