The recipe came out by accident - for the first time I prepared a marinade "by eye". Then I modified it a little and now it is perfect for our taste! Try to cook it according to the recipe - I'm sure you won't want to change anything here.

First, prepare the cabbage and other vegetables. I rub the carrots on a grater for carrots in Korean, chop the pepper not too finely, the garlic into thin slices. And I sort the cabbage into inflorescences. Not too large to be conveniently pricked on a fork 😊

Now the marinade. I add salt, sugar and vegetable oil to the boiled water. Stir and bring to a boil. Then I remove from heat and pour in vinegar. I always take vinegar 9%.

If for some reason you do not use vinegar, then the recipe is simply not for you. There's no substitute for vinegar!

I have noticed that cabbage tends to darken if left untreated. Therefore, so that it remains white and appetizing, I do this. I dilute citric acid in boiling water (at the rate of 1 g per 1 liter), pour in the cabbage and leave it there for 2-3 minutes. DO NOT BOOK!!! I just keep it in boiling water for 2-3 minutes! Just insects, if they suddenly "hid" somewhere, will remain in the water and will not get into the jar with the marinade.

I put vegetables in jars. I put some carrots on the bottom, then garlic.

Further - cabbage, bell peppers, a little more carrots and a little more garlic. Add cabbage on top, as much as fits.

I fill it with marinade and close the jars with lids. Marinade is hot! But you can pour it warm too - it will work too.

I leave the jars on the table until they cool completely, then put them in the refrigerator for at least 12 hours. In the refrigerator, such cabbage can stand for several months.

You can prepare such a salad for the winter and store it even at room temperature. But then jars of cabbage need to be sterilized for 7-8 minutes.

INGREDIENTS:

• Cauliflower - 700-800 g
• Sweet peppers - 2 pcs.
• Carrots - 1 pc.
• Garlic - 6 teeth.
• Citric acid - 1 g per 1 liter
For the marinade:
• Water - 1 l
• Sugar - 6 tbsp.
• Salt - 2 tbsp.
• Vegetable oil - 100 ml
• Vinegar (table 9%) - 100 ml
