Kefir dough: a little secret for pies to be fluffy like yeast

A very simple recipe. The pies are lush and delicious! I cook with any filling - it's always delicious! I am sure that everyone knows how to make dough with kefir. But try my little secret - and you will be surprised, the result will change so much!

I always say that a recipe is not only the amount of ingredients, it is also way to connect them! I already talked about this when I was cooking pancakes on kefir. And today I'll show you once again how important the order of adding ingredients!

In the beginning, everything is as usual. Sift flour into a bowl (not all at once!) - about 3 cups. Add softened butter and grind it with flour.

Beat an egg in a separate container, add kefir, salt, sugar and vegetable oil. I stir it. I don't add soda right away!

I pour the prepared mixture into flour and start kneading the dough.

I add more flour and knead the dough so that it practically does not stick to my hands.

Then I roll out the dough with a rolling pin and sprinkle with baking soda. Little.

Roll it in half and roll it again and sprinkle with baking soda. I do this 3-4 times.

Then I knead the dough and put it in a bag. I leave it on the table for 30 minutes. And you can shape pies!

Today I have pies with cottage cheese, but you can cook with any filling - with sweet or salty. It always turns out delicious! Can be fried in a pan or baked in the oven. The pies are very fluffy, soft and delicious. It looks like yeast! But there is one difference - they are always spotted)) These are:

RECIPE:
• Flour 4.5 - 5 glasses (my glass is 250 ml)
• Kefir - 500 ml
• Butter - 40 g
• Vegetable oil - 3 tbsp.
