How to cook

I cut the eggplants into slices about 1 cm thick. Then I cut it into 4 pieces. I do not remove the peel from the eggplant. It doesn't bother us. And the eggplant pieces remain intact.

I put the eggplant pieces into a bowl, salt, mix and leave for 20 minutes. Then I wash the eggplant and squeeze it lightly.

In a deep saucepan, heat up the vegetable oil and fry the onions until transparent. Then I send the carrots to the onion. I chop everything coarsely.

After a few minutes, add the prepared eggplants, chopped bell peppers and hot peppers to taste. One pod is enough for us. But you can add more if you like spicy.

I stir everything and cover it for 10-12 minutes.

Then I add the chopped tomatoes, mix gently again, cover and simmer for another 5-7 minutes.

Finally I add salt, sugar, a spoonful of apple cider vinegar and finely chopped garlic. Stir again and remove from heat after 2-3 minutes. By the way, you don't need to add vinegar. But it tastes better with it, so at least I always add a spoon.

I put the sausage in jars, cover it with lids. I use jars of 0.5 liters. Usually 5 jars are made from this amount of ingredients.

I put a towel at the bottom of a large saucepan, pour water over the hangers of the cans and from the moment it boils, I sterilize it for 7-10 minutes.

You can saute and not sterilize, but then it is better to add another spoonful of vinegar and simmer a little longer.

• Eggplant - 1 kg
• Onions - 500 g
• Carrots - 500 g
• Sweet pepper - 400 g
• Tomatoes - 1 kg
• Hot pepper - 1 pc.
• Garlic - 45-50 g
• Salt - 1 tbsp. (with a slide)
