Eggplants with vegetables, baked with sour cream sauce: I cook at least three servings for two, otherwise not enough

Fast, beautiful and very, very tasty! One serving is usually not enough. Therefore, I cook with a margin. Moreover, we also like this dish cold. Can be served as a main course or as a snack.

My eggplants, I cut off the tails and cut into a "fan". Like this:

I cut tomatoes, onions and potatoes into slices. Pepper - in rings. I put the eggplants in a mold and stuff them with chopped vegetables. It is better to choose potatoes that boil quickly. Or cook longer. But, of course, you don't need to add potatoes - it's also delicious!

Making the sauce. I mix sour cream, mayonnaise, garlic (through a press), grated cheese and salt. I stir.

I spread the prepared sauce on top of the vegetables.

I put the form in an oven preheated to 180 degrees for 20 minutes.

Then cover with foil and cook for another 30-40 minutes (until tender). Take a look in your oven!

Sprinkle with herbs and serve. This is delicious!
