Delicious dough for any filling!
The dough is delicious and fluffy! From this dough, I prepare rolls, and pies, and just small buns for tea. Today I have a recipe for orange pies. We call them "yummy pies of the new year". Highly recommend!

How to cook:
Grind cottage cheese in a blender or grind through a sieve. In a separate plate I dissolve yeast in warm milk, add a tablespoon of sugar (from the total amount). Stir until the yeast dissolves and leave for 10 minutes.
Sift the flour into a bowl (not all at once!). I add a pinch of salt, the rest of the sugar, an egg and melted butter. To this I add cottage cheese and yeast dissolved in milk.
I knead a soft dough. Flour always leaves a different amount. It depends on the quality of the flour itself and on the moisture content of the curd. But don't use flour on the dough! I will indicate the approximate amount. Usually ± 50 g, no more.
I grease the bowl with butter, put the dough in it and leave it in a warm place for 40 minutes.
RECIPE:
• Cottage cheese - 300 g
• Milk - 0.5 cups
• Sugar - 4-5 tbsp.
• Butter (or margarine) - 50 g
• Yeast (dry) - 1.5 tsp.
• Egg - 1 pc.
• Flour - 320-360 g
For filling:
• Orange - 2 pcs.
• Starch 2 tbsp.
• Sugar - 2 tbsp.
For spreading:
• Egg yolk - 1 pc.
• Milk - 1 tbsp.
For the filling, I disassemble two oranges into slices and peel them of films.
I pinch pieces off the dough and make pies. You don't even need a rolling pin here. I knead a piece of dough with my hands, a little starch on it (so that the juice does not flow out), orange pieces and a little sugar. I pinch the edges of the dough to make a pie.
I put the pies in a greased form with the seam down. I grease the top with yolk whipped with a spoonful of milk.
I put the baking sheet in an oven preheated to 180 degrees for 25-30 minutes.
