- Rinse peeled nuts quickly with cold water and dry.
- Grind nuts in pulse mode until crumbs.
- Add powdered sugar to them and grind everything together.
- The end result is a mixture of almonds and powdered sugar.
- In a saucepan, mix water with sugar, turn on the heat and bring to a boil and the sugar is completely dissolved.
- Boil the syrup to 115 ° C, this is a test for the "soft ball".
- Keep heat between medium and minimum.
- From the moment of boiling it usually takes me 5 minutes.
- Add chopped almonds to the syrup and grind everything well.
- Return the mass to the same blender and grind again at low speed.
- If you have bitter almonds, I recommend adding them now to enhance the flavor and aroma.
- In case of a large amount of marzipan, you can use a meat grinder.
- If the mass does not collect in a lump, adjust the density with boiled water, adding it in a teaspoon.
- If the mass is too thin, you can adjust the thickness with powdered sugar.
- You can put marzipan in the refrigerator.
