I will share a recipe for my favorite cookies. It is very tender, airy and unrealistically tasty. No matter how much I cook, we eat everything on the same day. I also like the recipe because there are a minimum of ingredients that are always at hand.
Ingredients:
eggs (proteins)
sugar
flour
powdered sugar
vanillin / lemon zest
We need 6 eggs. Separate the whites from the yolks. We remove the yolks, we do not need them, I then use them somewhere, for example, in an omelet or other dishes.
Beat the whites until fluffy, but not strongly - that is, not so that the peaks stand on the mixer. Add 1 glass of sugar and place on the stove. While stirring, heat the proteins with sugar to 40-45 degrees (the mass should be warm, but not hot).
Then add vanillin or vanilla sugar to taste, you can put the zest of half a lemon. We cool the resulting mass to room temperature, add 1-1.5 tablespoons of flour and then transfer to a pastry bag and make cookies.
Put the cookies on a baking sheet, greased with butter and sprinkled with flour. Leave the cookies on a baking sheet at room temperature until a thin "crust" forms on top.
Then we send the cookies to the preheated oven. We cook for 10-15 minutes at a temperature of 130-150 degrees. Ready-made cookies can be sprinkled with powdered sugar, or they can be combined in pairs using jam, condensed milk or cream. Have a nice tea, friends!
