Hot, aromatic cabbage soup - what could be better in the cold season?
Light and at the same time nourishing and warming. Today I want to share with you a recipe for light cabbage soup with Chinese cabbage, white beans and meatballs.
📌Ingredients that I used for 2.5 liters of water:
- 50/50 minced pork and turkey breast,
- onions - 1 piece 90 g,
- carrots - 1 pc - 100 g,
- Chinese cabbage - 600 g (can be replaced with white cabbage),
- canned white beans "natural" - 1 jar (I got 270 g of beans from the jar),
- tomato paste - 1 heaped teaspoon,
- salt, black pepper, ground coriander, dry dill, bay leaf, allspice.
Cooking.
We put a pot of water on the fire, add some salt. I added 1 level tablespoon of salt.
Finely chop the onion, grate the carrots on a coarse grater, and I immediately send the vegetables to cook, because I don't like the taste of undercooked carrots and onions.
You can cook frying using the minimum amount of oil (no more than 5 g), but the calorie content of the cabbage soup will increase.
If the vegetables are sent to be cooked, we bring them to half-readiness and throw in the minced meatballs.
The minced meat was pre-twisted - this is 50-50 lean pork and turkey breast, as well as a little onion. I salted and pepper the minced meat. I didn't add anything else.
Throw in the meatballs and cook over medium heat, gently skimming off the foam.
While the meatballs are boiling, cut the cabbage into smaller pieces
Immediately, as the meatballs surfaced, we throw them together with the beans into the pan.
Add a heaped teaspoon of tomato paste and all the spices: a little coriander, dry dill, allspice, lavrushka, black pepper.
Cook until the cabbage is ready - 10-15 minutes over medium heat.

Approximate KBZHU per 100 g of ready-made dish: K - 40, B - 3.3, F - 2, U - 2.4.
