Today I wanted to pamper my loved ones with pastries, so I decided to make curd yeast buns. I have known the recipe for these buns for a long time, I have been making them for ten years for sure. And now it's time to share the recipe with you))

Curd buns "like fluff". Soft and airy

Ingredients:

  • cottage cheese
  • flour
  • milk
  • butter
  • sugar
  • eggs
  • yeast
  • lemon and / or orange zest
  • salt

How to cook:

Let's make the dough. Mix half a glass of warm milk, 1 teaspoon of dry yeast, 1.5 tablespoons of sugar and 2 tablespoons of flour. Stir until smooth and remove the dough for half an hour in a warm place (you can cover it with a napkin on top).

In a separate bowl, mix two eggs, 1.5-2 tablespoons of sugar and 60 grams of soft butter. Beat with a whisk or mixer until the mixture becomes homogeneous.

Using a fine grater, remove the zest from one orange and one lemon. You can take only a lemon or just an orange - in general, this is a matter of taste. Add the zest to the egg and butter mixture.

Put a pinch of salt and cottage cheese there - about 180-200 gr. I recommend rubbing the cottage cheese through a sieve. Then add the dough, mix and add the sifted flour - about 350-360 gr.

Knead the dough and leave in a warm place for 1 hour. Then we form round buns and spread on a baking sheet at a distance from each other. Leave to stand for 15-20 minutes.

Lubricate the buns with an egg, sprinkle with poppy seeds or sesame seeds if desired and put in the oven. Buns are cooked at 180 degrees for 30-40 minutes.

From the specified number of ingredients, I get 12-15 buns.
