Ingredients:

  • flour - 300 g
  • kefir - 250 ml
  • milk - 250 ml
  • cottage cheese - 200 g
  • eggs - 2 pcs.

  • vegetable oil - for frying

Filling

  • fresh champignons - 500 g
  • onions - 2 pcs.
  • orange jam (for sweet filling)

Step by step recipe

1. First, let's prepare the mushroom filling. Cut 500 g of champignons into slices.
Put chopped mushrooms in a hot frying pan with a small amount of sunflower oil.
Fry over high heat.

2. While the mushrooms are fried, cut 2 onions into quarter rings.
When all the liquid has evaporated from the mushrooms, add a little sunflower oil and chopped onions.
Fry over medium heat until the onions are cooked.
At the end of frying, pepper the mushrooms, salt, stir and remove from heat.

3. Preparing pancake dough.
Pour 200 g of cottage cheese into a bowl, break 2 eggs and beat everything a little.

4. Add 250 ml of milk, a little salt and sugar to this. Beat everything again.

5. Pour 300 g of flour into the dough and beat until smooth.

6. We take 250 ml of kefir and pour 1 tsp into it. l. soda, mix and pour into the dough.
Finally mix the dough until smooth.

7. Fry pancakes.
Pour some sunflower oil into a preheated pan. Fry pancakes over low heat.
Pour half a ladle of dough into the pan and distribute it a little.
Immediately put the filling on one side of the pancake.

8. Almost immediately, as soon as the bottom of the pancake has grabbed, we fold it in half, helping with a spatula.
Cover the pan with a lid and fry the pancake on each side for 1-2 minutes.

9. The filling for such pancakes can be used very different, even sweet.
I used orange jam as a sweet filling, but you can also use cherries, grated apple, canned pineapple or peach.

Such stuffed pancakes turn out to be very tasty, fluffy and ruddy.
