Times are such that rest - even in Turkey - will not shine for many of us in the coming year. Firstly - the same pestilence (there are some phrases I know!), And secondly - lack of money as a result of the fight against this very weather.
And in Turkey to rest, no matter what opponents say there, firstly - warm, secondly - delicious.
And I can't help anyone with warmth, but I suggest repeating the goodies. And start with one of the easiest ones: pide flatbread. I have a platter. Mmm, really yummy.
Pide, as everyone probably knows, is compared by many to pizza, only in the shape of a boat. Delicate dough, juicy filling, aromatic cheese.
The filling in the pida can be different. With cheese, beef, with vegetables and cheese, with beef and cheese, with lamb, with sausage, with stewed eggplants, with any vegetables in general... You just can't list everything. The main thing, it seems to me, is the presence of cheese, tomatoes and a lot of greens in the pida.
So, for the test we take:
350 g flour (and 50 grams are still in stock, you never know)
1 hour l. salt
2 hours l. Sahara
1 tsp dry yeast
250 ml warm water
2 tbsp. l. olive oil
How do we cook
Sift flour (or not sift) together with yeast. In short, mix flour with dry yeast. If your yeast is not dry, then simply dissolve it in warm water.
Then, either in water with non-dry yeast dissolved in it, or add salt, sugar, olive oil to just warm water. And pour water into flour, kneading the dough. The dough should be sticky but not runny.
While the dough is settling and coming up, we are just preparing the filling (any !!!), and then... we divide the dough into two or three parts (depending on the size of your imagination). We spread it on a baking sheet, covered with parchment and sprinkled with flour, and, dusting our fingers with flour, we form ovals.
Next is the layout of the filling. First, you can coat the tortillas with tomato paste or tomato puree, if available. Then - the meat component, for example, minced meat overcooked with onions. No meat - sausage, then you can sprinkle it with finely chopped raw onion. And don't forget the greenery!
Put tomatoes and bell peppers on this layer, if any. And the greenery is sensitive again ...
Cover the top with cheese (and add a little greens to this).
We pinch the edges of the ovals with a boat, grease it all with olive oil and... Into the oven, preheated at 180-200 degrees for 15 minutes (although it is baked by someone).
Bon Appetit!
