Ingredients:
- pink salmon - 1 kg
- fresh champignons - 150 g
- onion - 1 pc.
- cheese - 50 g
- rice - 40 g
- parsley - bunch
- dill - bunch
- ground black pepper - to taste
- salt to taste
- vegetable oil
Step by step recipe:
1. First, let's prepare the filling.
40 g of my rice, pour into a saucepan and salt a little. Pour rice with 100 ml of boiling water and put on fire.
Cover with a lid and after boiling water, cook rice over low heat until tender.
2. Wash 150 g of mushrooms and cut into slices.
Cut 1 onion into half rings.
3. Put the prepared mushrooms in a preheated pan and fry over high heat until the liquid evaporates. When all the liquid has evaporated, add vegetable oil and put chopped onion here.
4. Fry the onions until golden. At the end, salt and pepper everything to taste.
5. 50 g of cheese three on a coarse grater.
Grind a small bunch of parsley and dill herbs.
6. In a bowl, combine boiled rice, grated cheese, fried mushrooms with onions and chopped herbs. We mix everything. The filling is ready.
7. Let's prepare the pink salmon.
We clean the fish from the scales and dry it with paper towels. From it you need to prepare two fillets.
8. Cut the pink salmon in half along the ridge. To do this, carefully cut along the bone with a thin long knife, and press it a little with your hand on top to better control the cut. I have 1 kg pink salmon.
Set aside the first fillet.
9. Turn the second piece of fish with a ridge onto the board, ridge down. And again we cut off the fillet with a knife along the ridge. We do everything slowly and carefully.
10. We cut off the belly of each fillet. We also take out the bones, it is most convenient to do this with bone tweezers.
Fillet needs to be salted a little.
11. Fold the foil in half and put it on a baking sheet. In the place where the fish will lie, grease the foil with vegetable oil.
Put one half of the pink salmon fillet. Put the prepared filling on the fillet.
12. Press the filling tightly with a spoon or hands. Put the second fillet on top.
13. We also grease the second sheet of foil in the middle with vegetable oil. Also grease the top and fillets. this is to prevent the fish from sticking to the foil.
We cover everything with foil and wrap the edges of the foil on all sides. It is advisable to arrange the top foil so that it does not touch the pink salmon.
14. We put everything in the oven preheated to 200 degrees. We bake for 30 minutes.
15. After 30 minutes, cut the top foil and open it. Put in the oven again for 5-10 minutes, so that the pink salmon is browned on top.
