Ingredients:

  • flour - 300 g
  • icing sugar - 125 g
  • lemon zest - from 1 lemon
  • butter - 175 g
  • cocoa - 40 g
  • peanuts (roasted peeled) - 50 g
  • eggs - 1 pc.
  • ground cinnamon - 1 tsp l.
  • baking powder - 1 tsp l.

Step by step recipe

1. Remove the zest from the lemon with a grater. Erase only the yellow layer.

2. Put butter at room temperature in a bowl, add powdered sugar to it and break the egg. Mix everything until smooth.
Add lemon zest and cinnamon to this. Mix again.

3. In a separate bowl, mix together the flour, cocoa and baking powder. We mix everything.
Add the flour mixture to the oil mixture in several approaches, constantly stirring.

4. Knead the mixture until a plastic and homogeneous dough is obtained. You don't need to knead for a long time.
Roll the dough into a ball, wrap it in plastic wrap and put it in the refrigerator for one hour.

5. We take out the cooled dough from the refrigerator and cut it into two approximately equal parts.
Roll each part of the dough with a sausage.

6. Now let's prepare the roasted peanuts.
Pour it into a grinder and grind it into small crumbs.

7. Pour the resulting crumb onto a flat dish.
Roll each sausage in chopped peanuts.

8. Wrap the dough in peanuts in plastic wrap and send it to the freezer for 15 minutes.
Cut the cooled sausages into slices, about 1 cm thick.

9. Place the circles on a baking sheet lined with Teflon or parchment paper.
We put the baking sheet in the oven, preheated to 180 degrees. bake for about 15 minutes.
Put the finished cookies on a plate and serve.
