Today I want to invite you to cook a very tasty, tender, one might say melting in your mouth pie with cottage cheese and berries.
The pie can be made with any berries you like.
If you don't like berries, then you don't need to add berries at all.

Let's cook, let's start with the curd mass
- Put 400 grams of soft cottage cheese without grains in a bowl
You can take any soft curd that you like. Cottage cheese can be replaced with cream cheese.
Beat up the cottage cheese so that it becomes tender and airy. If you have cottage cheese with grains, then it is better to beat it with a blender, or rub it through a sieve so that the cottage cheese becomes smooth and homogeneous.

- Add 1 egg to the curd
Stir at low speed of the mixer until smooth, no need to whip.
- Add the second egg
We also mix at low speed of the mixer until smooth.
- Pour 130 grams or 6.5 tbsp. tablespoons without top sugar
- 10 grams or 2 tsp vanilla sugar
- a pinch of salt
- 200 grams of sour cream. I have sour cream with a fat content of 20%, you can take more fatty sour cream. Sour cream can be replaced with thick natural yogurt
Stir at low speed of the mixer until smooth, no need to whip.
It turns out a delicate and airy curd mass.
Let's prepare bulk dough
- Sift 240 grams or 1.5 cups of wheat flour into a bowl. I have a 250 ml glass
- Add 20 grams or 1 tbsp. a spoonful of sugar
- 5 grams or 1 tsp. a spoonful of vanilla sugar
- 6 grams or 1 full tsp. a spoonful of baking powder
Stir so that all the ingredients come together.
Next, the cake is cooked quickly enough, so do not forget to turn on the oven to heat up to 180 degrees.
- Roll 100 grams of cold butter in flour and rub on a coarse grater
Periodically roll the butter in flour so that it does not melt.
Grind the butter and flour mixture into crumbs.
- 250 grams of frozen raspberries, you can take any berries that you like, sprinkle with 10 grams or 1 dessert spoon of wheat flour
Mix, each berry should be covered with flour. You do not need to defrost the berries in advance.
It is convenient to bake the cake in a detachable form
I bake in a springform pan with a diameter of 19 cm.
We close the bottom of the form with parchment paper, cover the sides of the form with nothing and do not need to lubricate.
- We will have 5 layers of crumb, so we visually divide the crumb into 5 parts.
Sprinkle the bottom of the mold with 1/5 part of the crumb, level it evenly.
- We divide the curd mass visually into 4 parts, we will have 4 curd layers
We shift ΒΌ part of the filling into a pastry or food bag and cover the crumb with curd mass.
- Divide the berries visually into 3 parts and put 1/3 of the berries on the curd mass
- Sprinkle the berries with crumbs
- Cover the crumb with curd mass
- Put some of the berries on the curd mass
- Sprinkle the berries with crumbs
- Cover the crumb with curd mass
- Put the remaining berries on the curd mass
- Sprinkle the berries with crumbs, lightly crush
- Cover the crumb with the remaining curd mass and level
- Sprinkle the curd mass with the remaining crumbs
We remove the bake in an oven preheated to 180 degrees for 60-70 minutes until a delicate golden color. The baking time will depend on your oven. The cake should rise with an even, beautiful hat.
- Let the cake cool completely in the form
When the cake cools, it will settle, it should be. Free the cooled cake from the mold.
For beauty, the cake can be sprinkled with powdered sugar.
The pie turns out to be very tasty, tender, aromatic and beautiful in the context.
