Today I want to share a recipe for fried fish in onion batter. I used to fry pink salmon in a different way, it also turns out delicious and juicy, but after trying to cook in onion batter, I realized that pink salmon can be cooked even juicier and more tender.
Here it is the ideal batter for fish, it not only makes the fish tastier, but also more tender and juicy, even pink salmon turns out to be not just juicy, but unusually juicy. The video below clearly shows how tender and juicy she is. The batter itself turns out to be very tasty, I always fry the cakes even from the remnants of the batter.

Recipe:
Pink salmon fillet -600g
For batter:
Sour cream -100g
Onion -1-2pcs
Garlic -2-3 teeth.
Salt -1 tsp
Black pepper - to taste
Flour -3 tbsp
Baking powder -1 / 2 tsp.
Egg -1pc
vegetable oil -2 tbsp
COOKING METHOD
And so we proceed. First you need to separate the fillets from the pink salmon. I do not defrost pink salmon to the end, so the fillet separates better.
My fillet weight is 600 grams, I do not remove the skin, it is so tender in the pink salmon and is not felt in the finished dish.
Now let's prepare the batter.
Chop 2 medium onions and 2-3 cloves of garlic, you need to get such a puree, I add 2-3 tbsp in the process. water to achieve uniformity.
Put in a bowl, put 100 grams of sour cream, break 1 egg, add 1 tsp. salt, black pepper. Mix and now add 3 tbsp. flour without a slide and half a tsp. baking powder, mix and pour in 2 tbsp. vegetable oil.
You should get a mass like a pancake.
Now lower all the fish and mix. We close it with cling film and put it in the refrigerator, let it stand for at least 30 minutes, you can of course start frying right away, but chilled fish turns out to be more crispy when frying in batter.
Pour vegetable oil into the pan, take the fish with a fork and put it in the pan, fry it over medium heat so that the fish has time to cook. As the fish turns brown, turn over and continue to fry the second side until golden brown. Remove on a paper towel to remove excess oil.
As I already said, I fry the cakes from the remains of the batter, they are very tasty.
Here's a fish that turns out. Without exaggeration, it turns out to be unrealistically tender and juicy.
