This dish is perfect for celebrating Maslenitsa - all guests will be delighted with such a pancake cake! But they can also be pampered by the family on a normal day off.
Fortunately, making these pancakes is not at all difficult - it is a pleasure.

Ingredients:

Pancakes

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt 1/2 tsp l.

Filling

  • cottage cheese - 500 g
  • sugar - 4 tbsp. l.
  • eggs - 2 pcs.
  • raisins - 100 g
  • vanilla sugar - 10 g

Fill

  • cream 33% (lower fat content is possible) - 200 ml
  • sugar - 2 tbsp. l.
  • eggs - 1 pc.
  • icing sugar (for sprinkling) - 1 tbsp. l.
  • butter (for greasing the mold) - 10 g

Step by step recipe

1. First, let's prepare the pancake dough.
Break 2 eggs into a bowl, add 1 tbsp. l. sugar and 0.5 tsp. l. salt. Beat everything with a mixer until light foam.

2. Take 750 ml of warm milk and pour about 300 ml into a bowl. Gently mix at low mixer speeds or with a whisk by hand so that the batter does not splatter.

3. Pour 300 g of flour here, first mix with the off mixer so that the flour does not gather dust, and then turn on and mix the dough at low speed until smooth.

4. Pour in the remaining 450 ml of warm milk. Mix again.

5. To prevent the pancakes from sticking to the pan, pour about 2 tablespoons. vegetable oil and mix. Leave the dough on the table to rest for 15-20 minutes.

6. The dough is infused, we fry the pancakes.
Before the first pancake, grease the pan with a little vegetable oil.
Take about half a ladle of dough and pour it into the pan, distributing it throughout the pan. Fry the pancakes over a slightly less than medium heat.

7. When the pancake is fried on one side, turn it over to the other side. So we fry all the pancakes. From this amount of dough, I got 25 pancakes in a frying pan with a diameter of 24 cm.

8. Cooking curd filling.
100 g of my raisins and pour boiling water. We leave for 10 minutes.
After 10 minutes, drain the water, and dry the raisins with paper towels.

9. We put half of the cottage cheese into the shredder, since everything does not fit at a time. Break 1 egg, add half of the sugar and add vanilla sugar. Grind everything until smooth. Grind the second part of the cottage cheese in the same way.
Put both parts of the curd filling in a bowl and mix everything.
In total, for the filling you will need 500 g of cottage cheese, 2 eggs, 4 tablespoons. sugar and 10 g of vanilla sugar.
The filling is ready.

10. We take one pancake and grease it with the prepared filling. For one pancake, you will need about 1 tbsp. l. curd filling. Sprinkle the filling with raisins on top. Roll the pancake with the filling into a roll.
We fill all the pancakes with this method.

11. Cut the stuffed pancakes in half.

12. Grease the baking dish with butter. The size of my form is 24 * 32 cm.
Put the filled pancake halves in rows in the form. We put each subsequent row on the previous one.

13. Preparing the pancake filling.
Pour 200 ml of cream into a bowl, break 1 egg and add 2 tbsp. Sahara. Mix everything with a whisk until smooth. I use cream of 33% fat, but you can use less fatty ones.

14. Pour the prepared filling onto the pancakes. Cover the form with foil.

15. We put in the oven preheated to 180 degrees and bake for about 30 minutes. After 30 minutes, remove the foil and bake for another 10 minutes to brown the pancakes.

16. We take out the finished dish from the oven.
Sprinkle the pancakes with icing sugar on top, if desired.
