Very beautiful and tender poppy pancakes with cottage cheese will not leave anyone indifferent. A thin poppy seed pancake and an abundance of delicate curd cream with a citrus hint. It is incredibly delicious!
Despite the fact that we will not steam the poppy, it does not turn out to be dry. Even those kids who don't really like cottage cheese will be happy with such pancakes. And adults will not refuse such a delicacy.
Poppy seed pancakes are not at all difficult to prepare from the available products. Be sure to bake them for Shrovetide, they are worthy to decorate the festive table!

Ingredients:

Pancakes

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • poppy - 2 tbsp. l.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tsp l.
  • salt - 0.5 tsp l.

Curd filling

  • cottage cheese - 500 g
  • sugar - 3 tbsp. l.
  • lemon - 1 pc.
  • vanilla sugar - 8 g

Step by step recipe

1. First, let's prepare the pancake dough.
Break 2 eggs into a bowl, add 1 tbsp. l. sugar and 0.5 tsp. l. salt. Beat everything with a mixer until light foam.

2. Take 750 ml of warm milk and pour about 300 ml into a bowl. Gently mix at low mixer speeds or with a whisk by hand so that the batter does not splatter.

3. Pour 300 g of flour here, first mix with the off mixer so that the flour does not gather dust, and then turn on and mix the dough at low speed until smooth.

4. Pour in the remaining 450 ml of warm milk. Mix again.

5. To prevent the pancakes from sticking to the pan, pour about 2 tablespoons. vegetable oil and mix. At the very end, add 2 tbsp to the dough. l. poppy seeds and mix again. Leave the dough on the table to rest for 15 minutes.

6. While the dough is infused, prepare the curd filling for the pancakes.
Remove the zest from 1 lemon with a fine grater. We remove only the yellow part. You do not need to take off the white one, so it will taste bitter.

7. Put 0.5 kg of cottage cheese in the bowl of the chopper, add 8 g of vanilla sugar and 3 tbsp. Sahara. Add lemon zest to this. Grind everything until smooth.
If the cottage cheese is dry, then you can add 1-2 tbsp. l. sour cream. Adjust the sweetness of the filling to your liking. If there is no grinder, curd can be twisted through a meat grinder or rubbed through a sieve.
The filling should turn out to be non-liquid, so that it can be easily spread on pancakes.

8. The dough is infused, we fry the pancakes.
Before the first pancake, grease the pan with a little vegetable oil.
Take about half a ladle of dough and pour it into the pan, distributing it throughout the pan. Fry the pancakes over a slightly less than medium heat.

9. When the pancake is fried on one side, turn it over to the other side. So we fry all the pancakes. From this amount of dough, I got 25 pancakes in a frying pan with a diameter of 24 cm.

10. We start pancakes.
We take the pancake and put it with the beautiful side with poppy down. Spread the curd filling on top all over the pancake. We turn the pancake into a tube.

11. So we fill all the pancakes. Raisins can be added to the filling if desired.

Poppy pancakes with curd filling turned out to be very tasty and tender with pleasant citrus notes. They are prepared easily and quickly enough.
