I think very few people would disagree that the first spring vegetable is young cabbage. She has already appeared here and there, lies - loose, green, and asks for a salad. And if you don't like the classic cabbage salad with carrots and oil and vinegar dressing, this is not a reason to look down on cabbage.
There are a lot of interesting - here are really interesting recipes for cabbage salads, which sometimes use an amazing combination of ingredients and give you a taste - you will lick your fingers.
Let's go over them? Today is salad of the day! With smoked fish and yoghurt sauce.
Wildly, huh? And, meanwhile, delicious. You can cook with red cabbage (as in the example), and with fresh white cabbage. The main thing is that the red is not oak. If it is too wooden, it is better to scald it with boiling water before cooking. If the cabbage is young, then you do not need to scald it.
We take:
- Half a fork of cabbage (a small fork, we don't need record holders);
- A jar of green olives;
- A little arugula or some other green salad;
- A couple of tablespoons of olive oil;
- 100 grams of natural yogurt;
- 200 grams of smoked salmon (you can - mackerel);
- Clove of garlic, salt, pepper;
- For those who like crunching, you will also need white salad croutons.
Cooking:
Cut the cabbage into strips, the fish into pieces (depending on whether you put the fish in a salad or on a plate next to it - the pieces are different, in the salad - into cubes, if next - into long pieces).
We tear arugula or some other green salad with our hands.
Now mix yogurt with olive oil, salt to taste, season with crushed garlic.
Mix cabbage, salad, fish, crackers, olives in a salad bowl, fill with dressing.
If you are afraid to immediately add fish to such a salad, just put it on a plate with a border, and in the middle - a salad. Next time you can add it to the salad bowl when you make sure that, despite the unexpected combination, everything is delicious.
