Today I cook amazing pancakes with kefir. Delicate, soft, with a very tasty and unusual filling.

We need 500 g of chicken hearts. Hearts, I washed them off, cut off all the excess, throw them into boiling water. Add salt, a small carrot and onion. And I'll add some dry dill sprigs for flavor. Cook for 40-50 minutes until cooked through.
Cut one large onion smaller and send it to a frying pan with vegetable oil. Fry until golden brown.
Now we need to grind everything up. It can be in a blender, or through a meat grinder. We turn chicken hearts, fried onions and boiled carrots into minced meat.
It turns out a very tasty juicy filling, for some reason it reminds me of beef tongue in taste. We try it for salt, add salt if necessary.
For pancakes, break 1 large egg into a bowl, pour in 250 g of kefir, I have kefir 2.5% fat. It's good if the kefir is at room temperature. Add salt (about 1/3 teaspoon) and a teaspoon of sugar, beat everything with a whisk.
Add 1/3 teaspoon of soda to a glass of flour 160 g and mix right in the flour. Don't look that my glass is not full, it is not a standard one, it is large.
Add flour and soda to a common bowl and mix so that there are no lumps. When the dough is thick, the lumps break very easily and a homogeneous dough is obtained.
Pour in 130 milliliters of boiling water and mix quickly. Thus, we kind of brew the dough. Finally, add a spoonful of vegetable oil. Mix again and let the dough stand for 10 - 15 minutes. Please note that after the dough has stood, it may thicken slightly, you need to check the consistency. If necessary, you can add a little more boiling water.
Now let's move on to the stove. I will fry the pancakes in a pancake pan with a diameter of 24 cm.
Put some dough into a ladle and gently distribute it over the entire surface of the pan. As the pancake gilts - turn it over. Here is such a sun turns out. These kefir pancakes are my favorite, the recipe has been on the channel for 3 years and is very popular.
From this amount of dough, I get 9 - 10 pancakes. The pancakes are delicious, soft and tender. They do not sour, despite the fact that they are on kefir.
